At Olive & Shae Rooted Catering, the menu items are more than just dishes – they are culinary adventures designed to excite the senses and challenge traditional notions of food. They approach food with a fresh perspective, infusing it with creativity, uniqueness, and a touch of whimsy. From unexpected flavor combinations to playful presentations, each menu item is carefully crafted to provide a memorable and fun dining experience. They believe that food is an art form that transcends mere sustenance, and they invite their guests to embark on a journey of exploration, discovering new tastes, textures, and cultural influences that broaden their culinary horizons. About Chef G:
Chef Guillermo's 40-year cultural journey began as a child of Puerto Rican and Spanish parents, both of whom were at ease in the kitchen and loved to entertain. His exposure to Latin culture and family ignited his passion for cooking, a passion that never left him even as he pursued Mayan archaeology. His 3-month project in Belize and Mexico further revealed the human connections that bind us all. This revelation led him to leave the academic world and enter the intense life of the restaurant, where he worked under the tutelage of Chef Douglas Rodriguez in Miami's acclaimed Yuca restaurant.
Guillermo quickly made a mark of his own as Executive Chef, gaining exceptional reviews in the Miami Herald, appearances on Discovery's "Great Chefs of the South," "America's Rising Star Chefs," and many local demonstrations. He was later recruited by the owners of Cuba Libre restaurant in Philadelphia to bring it to the next level, further solidifying his accolades, including being honored and selected to cook a dinner at the James Beard House in New York City. After 30 years as a restaurant chef, Guillermo stepped into the world of on and off-premise catering, and now proudly joins Olive & Shae to produce new, unique, exciting, and memorable food moments.
